We are seeking out a skilled man or woman with the proper abilities and revel in for the Juice Processing Specialist function primarily based totally in Wadeville. Main purpose: process management and quality control of juice production using extracted fruit juice or fruit pulp as raw material for pure fruit juice with/without other ingredients or diluted with sugar as nectar at Wadeville plant.
Key Duties & Responsibilities
Key Output:
- Juice preparation by dosing and mixing various juices from fruit juice supplied in accordance with the approved Mixing Instructions meeting specification described by KORE and ISO 22000.
- Adjust final beverage BRIX, titrable acidity and pH in accordance to MMI ensuring volume specification is obtained.
- Consolidation of physical usage vs. theoretical usage of all ingredients and juices.
- Work with G2G and CPS to determine the kit size for the ingredients supplied to minimize wastage of ingredients and juices.
- Ensure that new product launches in the juice category are correctly formulated to meet the plant design requirements, and that production costs are minimized to ensure profitability.
- Ensure water used for the juice preparation meets KORE requirements in terms of dissolved oxygen levels and other stated specifications.
- Train all subordinates involved with this process in roles and responsibilities to ensure that personnel practices do not contribute to an increase in the microbial load of the final syrup or environment.
- Ensure and control the storage of frozen/aseptic juices as required in storage tanks or in refrigerated storage. Determine shelf-life storage condition together with Suppliers.
- Together with the Logistics Planning department set up forward plans that meet requirements for juice procurement for the manufacture of juices required taking cognizance of maintenance and modification requirements to equipment. Planning also includes timeous contingency planning to ensure continuous operation.
- Liaise with G2G and CPS on supply of juice and strategic ingredients to ensure continuity of supply.
- Ensure the implementation of Good manufacturing practices that is critical to the successful preparation of juice beverages as described in KORE & PAS 220:2008 standards.
- Ensure a comprehensive cleaning program is implemented and adhered to, to limit bacterial growth.
- Interacts with CCSA through various forums as required, ensuring that new juice product launches are properly understood.
QUALITY CONTROL AND ANALYSES
- Checking and verifying that Quality Controllers are carrying out the required quality checks and analyses of manufactured final syrups, recording the information on the appropriate systems.
- Responsible for ensuring that laboratory equipment is operating optimally, calibrated and to identify problems or opportunities timeously.
- Ensure that CCSA & KORE changes to analytical standards are implemented, through additional training where necessary.
- Ensures that CCSA/KORE/SABS standards have been adapted to meet requirements and processes documented accordingly.
TEAM LEADERSHIP
- Lead the juice preparation team in a manner that engenders ownership, empowerment and team interaction.
- Mentoring, supporting and coaching team members in the correct execution of their tasks. • Develop subordinates and ensure training needs are met by carrying out training needs analysis, one-on-one’s and performance reviews. Where training needs have been identified, corrective action must be initiated.
- Exercise budgetary controls.
SAFETY AND HOUSEKEEPING
- Ensure that the Juice processing teams apply proper safety and housekeeping procedures, and adhere to all legal requirements when carrying out their tasks.
- Ensure implementation of the appropriate CCSA and legislative policies (such as OSHAS) on safety and housekeeping.
- Ensure that safety and housekeeping receive appropriate focus through regular checks and safety audits.
- Where unsafe work practices have been identified, the Lab manager is responsible for correcting this.
KNOWLEDGE
- Strong understanding of FMCG manufacturing in fruit juices.
- Working knowledge of MS Office 2007, Lotus notes, AchieverPlus, etc.

Skills, Experience & Education
Qualifications / Experience:
- BSc (Micro or Biochem) or QA/Food Tech. Diploma
- 3-5 year’s laboratory experience in supervisory or management capacity.
